Today we have been sowing seeds of Zalla’s purple onion in our vegetable garden and we want to share some info and pictures with you.
What makes it so special is its sweet, tasty, juicy and not spicy meat. Juiciness can be felt when cutting. Its sweetness and texture makes it a very versatile product in the kitchen. Moreover, its conservation is great.
Eneko Atxa himself has confessed occasionally to be a fan of Zalla’s purple onion: "There are two key things that differentiate it from the rest of the onions, I believe that behind, there is a peculiar and important history. On the one hand, a community who has recovered a product and made it worthy, on the other, taste properties, it is an onion with impressive toasted sugar values, we can find different shades, from light elegant itching with that personality that must have an onion, and sweet nuances. In addition it is visually breathtakingly beautiful". For these reasons we decided have some in Azurmendi's vegetable garden.
