More than a restaurant, Azurmendi is a unique building whose foundation is sustainability. Not surprisingly holds the award for Most Sustainable Restaurant in the World 2014.
In addition to its incredible cuisine, from this year on it has a Sustainability Center which houses the biggest seed bank provided by the Institute of Agricultural Research and Development Neiker Tecnalia. The center has over 400 varieties of native seeds from the Basque Country and it also has a explanatory panel about the construction of the gastronomic building. It is probably one of the most unique contemporary buildings within sustainable architecture. It responds to the canons of Basque identity and integrates technical elements that allow to generate energy through photovoltaic solar panels as well as using geothermal energy, collecting rainwater to cover some of their operations, create compost with organic waste, etc. It also has a charging station for electric cars.
It is remarkable that through the center and its small garden, Azurmendi tries to recover lost varieties of local vegetables. From now on customers who live the new experience of the gastronomic restaurant *** can collaborate with this initiative. The visitor will be given a sack with native seeds and it correspondent passport (for foreign customers) in order to have a living part of Azurmendi and make a contribution planting them in their homes.
The chef Eneko Atxa considers this building as “his home”. Since its beginning it has committed to sustainability and contributes to the 2030 Agenda for sustainable development of the United Nations.
